This week, I added fresh ground peanut butter! It's the kind that you grind yourself in the bulk food department, so that there is no added sugar, only dry roasted peanuts. Perfect for those that are avoiding refined sugar. And yeah, it's good stuff.
INGREDIENTS
3½ cups rolled oats (old fashioned oatmeal)
1 cup chopped or sliced almonds
1 cup chopped pecans
2 teaspoons ground cinnamon
1½ teaspoons ground ginger
½ teaspoon ground nutmeg
½ cup natural peanut butter <<<<< the new ingredient I've added!
6 tablespoons butter
½ cup honey
2 teaspoons vanilla extract
½ teaspoon salt
Also need – parchment paper and a rectangular baking sheet
INSTRUCTIONS
1. Preheat the oven to 250° F. Cover a rectangular baking sheet with parchment paper.
2. Mix the dry oats, almonds, pecans, and spices together in a large mixing bowl.
3. Heat the peanut butter, butter and honey together in a small saucepan over low heat.

4. Pour the hot liquids over the dry ingredients and stir together with a rubber spatula until

5. Spread mixture onto prepared pan in an even layer. Bake for 75 minutes at 250 ° F.
6. Cool in pan, on the counter top.
Truth be told, this doesn't stay around in our house for 2 weeks. Now that I've added Ed's favorite food group peanut butter, I'm sure it will disappear quickly!
